Avocado & Microgreen Salad with Avocado Oil

This combination of a simple dressing, a veggie (well, technically a fruit), a protein, and our satisfying salad base takes less than 5 minutes to put together and serves as a balanced meal!

 

Avocado & Microgreen Salad with Avocado Oil:

Ingredients

  • 4oz Marudan Microfarms Microgreen Salad Mix (one full box)
  • 1 avocado, peeled and cubed
  • 5-8 chicken meatballs (we used IKEA's HUVUDROLL meatballs!)
  • 4tbsp Made With Love Tuscan Garlic Infused 100% Avocado Oil, another wonderful South Loop Farmers Market vendor!

Directions

  • Follow directions to thaw and heat the meatballs of your choice. Even though they're usually precooked, we like to toss ours in a pan or in the air fryer for a few minutes to give them a slight outer crisp.
  • As the meatballs thaw, toss your Microgreen Salad Mix with your Avocado Oil dressing. After the dressing is incorporated, toss once again with the avocado cubes.
  • Plate the tossed salad and top with the meatballs.
